Since ancient times condiments have been used to enhance food, but the origins of these condiments might be surprising. Among the most popular condiments in the United States, ketchup, mayonnaise, mustard, and Worcestershire sauce have the most interesting origins.
One of the most popular condiments in America has a surprising past. The word €ketchup' comes from the Chinese ke-tsiap. And if you're wondering why modern ketchup isn't widely used in Chinese food it's because ke-tsiap was a sauce made from pickled fish! The original ingredients included anchovies, shallots, vinegar, white wine, cloves, ginger, mace, nutmeg, pepper, and lemon peel. Ke-tsiap gained popularity in Malaysia and Indonesia. During their travels to the Far East, English and Dutch sailors brought the recipe back to Europe. In the early 1700s the fish in the recipe was discarded, tomatoes were added, and ke-tsiap became ketchup.

Mayonnaise was invented in 1756 by the French chef of the Duc de Richelieu. After the Duc beat the British at Port Mahon, his chef created a victory feast that was to include a sauce made of cream and eggs. Realizing that there was no cream in the kitchen, the chef substituted olive oil for the cream and a new culinary creation was born. The chef named the new sauce "Mahonnaise' in honor of the Duc's victory in the port of Mahon. Today, mayonnaise is the number one best selling condiment in the United States.

Mustard is a contraction of Latin words meaning €burning wine'. However, mustard wasn't always appreciated for its tastier qualities€¦ instead it started out as the ancient equivalent of Neosporin. It is said that Pythagoras prescribed it for scorpion stings, and Hippocrates used it to cure toothaches. Pope John XXII was reportedly so much a fan of mustard that he established a new Vatican position, grand moutardier du pape, which means "Mustard-maker to the Pope.€

It is said that Worcestershire sauce was invented accidentally in England by locals trying to create what they thought was authentic Indian food. In this case, the demanding diner was one Lord Marcus Sandy, a former colonial governor of Bengal. Having grown attached to a particular flavor of Indian sauce, he recruited two drugstore owners, John Lea and William Perrins, in hopes that they could recreate it based on his descriptions.

Lea and Perrins thought they'd make a profit by selling the leftovers in their store. Unfortunately the sauce they created had a powerful stench, so they stashed it in the basement and forgot about it for two years. Lo and behold, it aged into something that tasted much better. Lea and Perrins sold the stuff to a myriad of customers, and they convinced British passenger ships to carry some aboard.
Most recently, salsa has passed ketchup as number two in America's best selling condiments list. This popular party time snack got its origins from the Aztecs, Incas, and Mayans.
