    • 1). Place the crab on a strong surface suitable for cutting such as a cutting board or butcher's block.

    • 2). Flip the crab over onto its back, and position your knife blade along the centerline of the abdomen. Use a knife large enough to cover the entire abdomen.

    • 3). Pound the knife blade through the crab using a rubber mallet, cutting it in half in one motion.

    • 4). Clean the crab by pulling the legs off the remaining shell halves, pulling out the gills and rinsing the legs and claws in water.
