    Coffee, Tea and Beverages

    • Regular and decaffeinated coffee and tea are a welcome sight for those arriving to a social or business conference. Coffee and tea should be available throughout the day to clear foggy heads and provide a helpful distraction. Disposable cups are most useful and help avoid excess dish washing. Various canned beverages such as soda pop and ice tea should be chilled and available with lunch meals. Diet and caffeine-free versions should also be on hand to suit all dietetic choices.

    Breakfast Foods

    • An all-day conference should begin with an assortment of breakfast foods. A continental breakfast is appropriate, easy to manage and allows guests to choose items that suit their own tastes. Include an assortment of individual yogurts, fresh baked muffins, danishes and bagels. Butter and cream cheese should be served on the side to accompany bagels. Continental breakfast may also include a fresh fruit platter containing cut and sectioned fruit for easy handling.

    Lunch Foods

    • Lunch should consist of foods that are convenient and gratifying. Sandwiches and wraps are easy to prepare and may be created with a variety of fillings. Approximately two hours is required for one person to assemble 100 sandwiches. Sandwiches may be made with plain white, whole grain and rye breads. To estimate the number of sandwiches required, account for one and a half sandwiches per person. Sandwiches may consist of tuna, egg and salmon salad, roast beef and turkey. For a vegetarian alternative, layer sliced tomato, lettuce, cheese, avocado and mayo to create a vegetable club sandwich. Liven up tuna salad with black olives and fresh dill. Create gourmet versions with the addition of brie, Swiss or havarti cheese to beef, turkey or vegetarian options. Mixed green, noodle and potato salads may accompany sandwiches and wraps. Add mandarin oranges, cashews and Asian dressing to mixed greens for variety.

    Desserts and Snacks

    • Light and easy desserts, such as butter and fruit tarts, brownies, cookies and squares may follow lunch. These are easily prepared ahead of time, require no cutlery and may be eaten with hands. Any leftover dessert may be enjoyed with coffee for an afternoon snack and will help keep people alert throughout the remainder of the conference.
