Video: An Ice Cream Sundae With Fudge & Peanut Butter Cookies

Hi, I'm Katie Rosenhouse. I'm a pastry chef living in New York City, and I'm here for eHow.com to show you a really easy way to make molasses cookie ice cream sandwiches. So I'm starting with some store bought gingersnaps or molasses cookies. You can make your own. I highly prefer if you do make your own, but I was in a rush so I have really cute sized, I'd say it's about palm sized cookies ready to go. And all I'm going to do is kind of match up, make sure they're all the same size. If they're not, I just kind of stagger. So this is a really easy way of kind of preparing yourself to fill your ice cream sandwiches. I'm going to do about four. And what I'm going to fill them with is probably my favorite thing in the world, vanilla ice cream. But I'm jazzing it up for fall if you will, with some pumpkin swirl. So if you love vanilla ice cream, you want to make your own flavor, I'm a big fan of mix ins. I feel like it's really easy to take a generic vanilla chocolate strawberry and really add in things that you love and mix them all together and make your own ice cream creation at home without having to have an ice cream machine ready to go. So I have vanilla ice cream that I'v softened. You can see it's nice and easy to stir around and work with. This is almost like that store where you on the marble mixing your own mix ins. A little store bought pumpkin puree. This is just the canned pumpkin that you buy in the store. I have about I'd say about half a cup. OK and all I'm going to do to sweeten it up is add a little condensed milk. About a quarter cup of condensed milk. And you can see how thick and luscious that is. And that fat and sugar in the condensed milk is going to keep your pumpkin really nice and soft in your ice cream. So it's not going to become like hard pumpkin in there, it's going to be this really beautiful swirl. And all I'm going to do is stir those two things together. This is almost like making easy pie filling. You can see how nice that is already. I would spoon that over a lot of things. A little cinnamon, a little nutmeg. You can use pumpkin pie spice, that's what I'm using. Just a little swirl of that. A little salt so important. What salt does is it really brings out the flavors in any dessert. So whether you're working with chocolate, with something like condensed milk or dulce de leche, it's really going to take those flavors to the next level and really enhance anything that you're making. So always, a good pinch of kosher salt. So it's a good idea. And last for a little crunch, I have some pumpkin seeds. And really I'm just going to add those right to my ice cream. And the reason for that is this way I can really see how many I want in there. And I'm going to take my pumpkin and just nice blobs right in there and I'm going to swirl my ice cream. It's like fall in a bowl. It's delicious. So that's plenty. You can even add a little more spice if you want. This is just going to help your vanilla kind of take on those fall flavors. And all I'm going to do is swirl that really gently. I'm not looking to really mix it all in and incorporate just to swirl it around and you can see it already looks beautiful. Just like that. And this can be like the perfect filling for gingersnap cookies. So you can see my gingersnap or molasses cookies are ready to go. I have an ice cream scoop and a little hot water. What that does is it's going to make sure that your scoop isn't kind of sticking to your ice cream and making it really hard to get out and also that you're going to get that nice round shape. You can see it's the perfect size for my cookie. OK so all I'm going to do is go in with my ice cream. Nice flat scoop, not too much. And just right on to my cookie. Beautiful. Let's get this out of the way. We'll continue on, we'll make sure all of them are filled and ready to go. Really nice. You can see all those little green pumpkin seeds kind of peeking out. And you can do this with so many flavors, you know if you love nutmeg and you love dried cherries or you love mango, you know ginger and molasses they go with so many really great flavors, so it's fun to play around depending on what season you're in. And that's it. Top these off. Just push down gently. And I'm going to immediately get these back into the freezer so they're ready to go. If you wanted a fun way to jazz them up, I have just a container with some ribbon. And I like green just because it kind of goes with my pumpkin seeds, but I'm going to go with my ribbon and just go right underneath. I'm just going to tie a very quick little bot right on top. I like to knot it first so it's not going to move around on you. Then just peek it out. Perfect little ice cream sandwich. Pumpkin molasses cookie ice cream sandwich. So easy as can be.
