For a familiar treat with a tropical twist, make ice cream from scratch but add pureed mango to the mixture. Mango ice cream or sorbet purchased from the store can be substituted. A variation of haupia, served at Restaurant Miwa in Hilo on the Big Island of Hawaii, incorporates haupia into a cream-cheese pie -- resulting in a rich tropical twist on everyday cheesecake. - Fresh fruit, the simplest form of dessert, is easily adaptable to your luau menu. If you make a fruit salad, use tropical fruits such as papaya, mango and pineapple. Fill a hollowed pineapple half with the fruit salad for a tropical presentation. Fresh pineapple, papaya and mango chunks can be served with a yogurt dipping sauce, if you do not have time to make a salad of mixed fruit.
