Selenium is a trace mineral that has many benefits; however it is a toxic trace element when in the 1930's high-selenium plants eaten by livestock caused loss of hair and blind staggers.
Research shows that selenium prevents liver necrosis in vitamin E-deficient rates, and prevents diseases in domestic animals, such as white muscle disease in cattle and sheep, and exudative diathesis in poultry.
The benefits of selenium include: - Basic human health - Protector of cancer and cardiovascular disease - Immune system enhancer Specific proteins are formed to allow selenium to work on the body, there are 25 in the body, processes of these are: - Antioxidant defence - Thyroid metabolism - Immune function - Reproductive function Too much selenium can lead to loss of hair and nails, the skin, nervous system, and teeth.
Garlic odour on the breath is a sign of over exposure; therefore the fine balance with selenium is important.
The amount in plant (vegetables) is dependent upon the amount in soil because this is where the plant gets its selenium from, an over production of soil (over use) uses up the selenium supply and without letting the soil rest the mineral content is depleted.
Garlic, mushrooms and broccoli can accumulate selenium form the soil.
Brazil nuts are an exceptionally good source also.
Fish and organ meats are the riches sources, then muscle meats, cereals and grains, dairy products, with fruits and vegetables being mostly poor sources.
Therefore, dietary intake varies with geographic source of the food and eating habits.

Before 1990 in Great Britain selenium intake was 60 µg/day, which corresponded to 1.

52 µmol/L, however after 1990 selenium intake is 29-39 µg/day, which corresponded to a 0.

Therefore to protect against cancer, improve hormonal and immune system function and increase your antioxidant defences get eating selenium rich foods.
It is also important to eat organic products as the selenium intent within the soil is increased therefore there is an increase in selenium within the food.
