    • 1). Choose the beers the restaurant or bar will serve. Consider the clientele in selecting the beers. For example, if the restaurant boasts a family dining atmosphere, choose domestic drafts and only select premium beers.Choose more premuim drafts and imported beers if the establishment intends to serve beer geeks.

    • 2). Price the beers according to their price per ounce and popularity.Price rarely ordered premium beers at a higher margin, and frequently ordered domestic beers at a lower margin.Offer specials on beers to help encourage purchase of certain brands when necessary.

    • 3). Organize the beers into categories.Group premium beers together and domestic beers together. Make sure to denote beers that are bottled and beers that are offered on draft.

    • 4). Type the menu. Include the beer price, category, description and food pairing, if applicable. Use a legible font and color scheme. Include rotating drafts on the white board at the entrance of the restaurant, or type a separate menu each week to accompany the main beer menu.

    • 5). Print the beer menus onto card stock and protect them in a folding menu cover. Place the menus where the waitresses and customers can reach them.
