Ingredients
- 8 slices brioche bread, 1/2" thick
- 2 cups blueberries, fresh, washed
- 8 oz cream cheese, softened
- 4 tbsp honey
- 1/2 cup granulated sugar
- 12 whole eggs
- 4 oz Half & Half
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 2 oz whole butter
- 12 slices Applewood smoked bacon
- 1/4 cup brown sugar
- 1 tbsp powdered sugar
- 8 oz whipped cream
- 6 oz maple syrup
- Yield: 4 portions
Preparation
For Blueberry Sauce:1) Combine 1/2 cup of blueberries with 1/4 cup granulated sugar and one cup of water.
2) Bring to a boil, and using a fork, smash the bluberries. Reduce heat to medium-low.
3) Reduce to a syrupy consistency. Yields 1/2 cup of sauce.
For Filling:
1) Using a rubber spatula or wooden spoon, combine one cup of blueberries, cream cheese, honey and blueberry sauce in a mixing bowl.
For Batter:
1) Combine whole eggs, half and half, cinnamon, nutmeg and 1/4 cup of granulated sugar with a wire whip until smooth.
For French Toast:
1) Spread 1/4 of the filling evenly on four pieces of brioche bread from edge to edge.
2) Top each with another slice of bread.
3) Dip each portion of stuffed toast in the batter and brown both sides in butter on a griddle or in a small non-stick saute pan.
4) Place all four portions onto a baking sheet and warm throughout in a 350 degree oven for 3-4 minutes.
For Caramelized Bacon:
1) Toss bacon in brown sugar and lay in a single layer on a sheet tray. Top with remaining brown sugar.
2) Bake in a 350 degree oven for 10-12 minutes or until desired doneness is achieved.
To plate:
1) Place french toast onto four separate plates.
2) Garnish each with 1/4 of remaining blueberries, whipped cream and a small mint sprig.
3) Serve with 3 pieces of caramelized bacon and dust all with powdered sugar.
4) Warm maple syrup up and place in a small sauce boat in middle of the table.
