Instructions for Heating a Water Smoker

    • 1). Soak a handful of wood chips in water for approximately 30 minutes. The soaked wood chips will smoke during the cooking process.

    • 2). Remove the smoker's water pan and charcoal pan.

    • 3). Fill the charcoal pan with charcoal, halfway. Insert the charcoal pan back into the smoker body.

    • 4). Fill the water pan to its fill line with water, then insert it back into the smoker.

    • 5). Ignite the charcoal with matches. Allow the charcoal to burn until the flame has burned down and the coals are red hot. The coals should be a grayish color.

    • 6). Place the soaked wood chips on top of the hot coals and close the door of the smoker chamber.

    • 7). Place the food you wish to smoke on the grill rack of the water smoker and cover with its lid.

    • 8). Smoke the food for two to four hours, adding more wood chips every hour. Check the temperature gauge of the smoker. The ideal temperature should stay between 180 and 240 degrees Fahrenheit. If the temperature ever drops below 180 degrees you will need to add more wood chips to the smoker chamber.
