Fun Food: Baked Potatoes Stuffed with Sausages
An apple corer can easily make uniform holes in the potatoes, or use a sharp paring knife.
I found this "pigs in a poke" recipe in an old newspaper clipping. This would be a fun dish for kids, and it would work well as a camping recipe.

Ingredients
- 4 large baking potatoes, scrubbed
- 1 package precooked breakfast sausage, or about 8 cooked sausages
- olive oil
- kosher salt and pepper, to taste
Preparation
With an apple corer or sharp knife, make 2 holes in each potato, either end to end or through the sides; stuff with sausages.
Rub the potatoes with a little olive oil and sprinkle with salt and pepper.
Wrap each potato tightly in aluminum foil.
Bake at 375° for about 45 to 60 minutes, or until the potatoes are fork tender.
Serves 4.
