Lunch Ideas for Groundhog Day
- Start your Groundhog Day lunch off with a snack that reflects the foods that Punxsutawney Phil likes to much on. If you're serving up lunch for a class, this is a good way to educate them about groundhogs. Groundhogs eat green plants, alfalfa and seeds. While that might not sound appetizing to you, you can serve broccoli with dip and a trail mix -- a human-friendly way to honor the lunches of groundhogs.
- The men who surround Punxsutawney Phil as he makes his annual prediction are known as the Groundhog Club's Inner Circle. In honor of their role in the Groundhog Day celebration, make "Inner Circle" sandwiches. Use a cookie cutter to cut bread into circles. Any type of sandwich works. Fill the sandwich circles with your favorite lunch meat, cheese and all of the fixings.
- Finish your Groundhog Day lunch off with a sweet treat. Transform a simple chocolate cupcake into a groundhog with a little decoration. Make your favorite chocolate cupcake recipe.
