How to Prevent Sugar Crystals in Pecan Tassies
- 1). Mix the butter, cream cheese and flour in a bowl to form a soft dough.
- 2). Shape the dough into a flat round disc and wrap in plastic wrap.
- 3). Refrigerate the dough for one hour.
- 4). Preheat the oven to 350 degrees. Spray the inside of the mini-muffin tin with cooking spray.
- 5). Pinch off golf ball sized pieces of dough and press each into a well of the muffin tin. Push your finger into the center of each to create a depression for the filling.
- 6). Mix the butter, brown sugar and egg together until combined. The butter and egg act as interfering agents to prevent the brown sugar from crystallizing.
- 7). Stir the pecans into the mixture and evenly divide it among the muffin tins.
- 8). Bake the tassies for 25 minutes at 350 degrees or until set.
