    • 1). Select the type of wood chips you want for flavor. Hickory is popular as well as alder, oak and pecan.

    • 2). Soak the wood chips in warm water. Let the chips soak for several hours.

    • 3). Cover the bottom of the smoker grill with charcoal briquettes and ignite. Let them burn until they reach a temperature of about 140 degrees Fahrenheit.

    • 4). Spread the wood chips on top of the heated charcoal in the bottom of the smoker grill. They will begin to smoke immediately.

    • 5). Place the pork ham on the grill for five or six hours. Ham is fully cooked at 170 degrees Fahrenheit.
