    • 1). Light the grill by turning on the gas control knob and inserting a lit match into the match hole. You may want to use a long, fireplace match or even a fire starter with a long nose. This will prevent any flare from touching your hand. Always use precaution when lighting a gas grill. If your grill does not light right away, then turn the gas off and wait for several minutes before starting again.

    • 2). Pre-heat your grill before you start cooking on it. Preheating for 10 to 15 minutes allows some food particles and oils to burn off of the grill. If the weather is especially cold, you may need to preheat your grill for up to 20 minutes before beginning to cook.

    • 3). Spray a cooking spray, such as an olive oil spray or canola oil spray onto the grill grates just before you are ready to cook your food. This will prevent the food from sticking to the grill as it cooks.

    • 4). Place wood chips between the cooking grates, if you want to add a smokey flavor to your food. You do not need to pre-soak the wood chips. You can use any variety of chips that you like, such as mesquite, cherry or even peach. If you want to use wood chips to add flavor, you need to put the wood chips between the grates before you light the grill.

    • 5). Adjust your cooking time to account for the Char-Broil grill's elevated heat levels. Depending on what you are used to cooking with, you may need to cook your food for a shorter amount of time than usual, especially if your grilling experience is limited to a charcoal grill or pan-cooking your food. Experimenting with cooking times on the Char-Broil grill is the best way to learn how long various foods will need to cook.

    • 6). Keep food positioned in the center of the grates as you cook. If cooking fatty foods that have a tendency to drip oil, then leave the grill cover uncovered to increase the oxygen flow and reduce the chance of flare-ups.

    • 7). Remove the food and turn your grill temperature to high. Close the lid and allow the grill to burn away excess food particles and oil for fifteen minutes before turning your grill off.

    • 8). Clean the grill grates after every use with a grill brush when the grill is cool. This will remove any burned particles or leftover food from the grill. If you use your grill regularly, consider removing the grates and soaking them in a water-and-vinegar solution for an additional cleaning once every season.
