Winter Slaw - A Sweet and Crunchy Apple Coleslaw Recipe
This simple and delicious coleslaw recipe has a wonderful combination of sweet crisp apples and fresh crunchy cabbage. The recipe's called winter coleslaw because of the apples, cabbage and citrus dressing, but would also work for any summer cookout.
Makes 10 Portions Winter Coleslaw
Ingredients
- 1/2 green cabbage, sliced fine
- 1/4 cup fresh lemon juice
- 1/2 cup mayonnaise
- 1 tsp Dijon mustard
- 4 crisp red apples
- 1 tbsp finely chopped tarragon
- 1/2 tsp sugar
- salt and fresh ground black pepper to taste
- pinch of cayenne

- Total Time: 20 minutes
Preparation
Add the cabbage to a large bowl. Add the lemon juice, mayo, and mustard; toss to combine. Core the apples and using a vegetable slicer or knife, slice the apples into a large julienne (matchstick-shaped cuts). Add to the cabbage along with the rest of the ingredients. Serve immediately.Note: If prepping ahead of time, wait until right before serving to slice and add the apples so they remain crisp.
