High quality stoneware does not absorb odors or flavors, but as it gets older and more used, it will change colors. This is called seasoning and only increases the natural non-stick properties. Another popular material is glass. It is see-through so cooking times can be easily monitored in order to get the exact coloring that is desired. It is highly effective with items that are considered high grease items as you can monitor where the grease level is and then pour part off if needed.
