    • 1). Soak 1 to 2 cups of hickory chips in water for about 30 minutes.

    • 2). Wrap the soaked hickory chips in heavy-duty aluminum foil, making a packet.

    • 3). Poke five or six holes in the top of the packet.

    • 4). Place the foil packet over the burner, under the grate.

    • 5). Turn the grill to high, then reduce the heat when you see smoke from the pouch.
