    • 1). Purchase self-blanching celery plants. They are less bitter and don't need to be blanched.

    • 2). Water the celery and keep the soil constantly moist. Do not allow the soil to dry out. Dry soil can cause the celery stalks to have a bitter taste.

    • 3). Shade the celery stalks 10 to 14 days before harvest -- you need to blanch the celery. For this, you can cover the stalks with straw or soil, leaving the top leaves sticking out at the top. You can also mound soil around the celery stalks to shield them from the sun.

    • 4). Cut out the top and bottom of a milk jug, and put it over the celery to help shade the stalks.

    • 5). Shade the plants for no more than 14 days, because the celery may rot or become pithy.
