An interview is a conversation between two or more people where questions are asked by the interviewer to educe facts or statements from the interviewee.
An interview gives you insight on what the person you are interviewing thinks, or appears to be thinking.A person can choose to tell the truth or lie during an interview, but either way, it tells you something about the person. If he is telling the truth, then you know how he feels about a certain topic. However, if he is lying, then you know he does not always tell the truth and lies to the media.

Interviews are one of the hiring tools available to employers, used extensively to judge how appropriate a candidate is to fill a role in an organization.
The Interview provides an opportunity to meet several candidates and screen them to find the ones most suitable for the organization.
It helps to evaluate a person's skills, capabilities and personality trait.
Help to check a candidate's confidence level and ability to handle a pressure situation.
It helps narrow down, select and hire the best talent to fill the job vacancy. This should   ideally be a person who is focused, skilled, confident and excited.

The are many important points that should be kept in mind while going for interviews:

1. Research as much as you can about the company. See the tips about researching before   job interviews.
2. Prepare your answers for the type of questions you'll be asked, especially, be able to say why you want the job, what your strengths are, what your best achievements are.
3. Prepare good questions to ask at the interview. See the section on questions to ask at job interviews.
4. Have at least one other interview lined up.
5. Make sure your resume/cv is up to date.
6. Ensure you have two or three really good reputable and relevant references, and check they'd each be happy to be contacted.
7. Try to get some experience of personality tests.
8. Think about what to wear. Appearance plays a vital role in first impression on the interviewers.

Interviewee

Importance of interviews:

Interviews are important for the interviewer and the interviewee.

Interviewer
A chance to see if the person matches up to the resume. Resumes prepared by resume mill can make a poor choice look good. Usually a person getting an interview meets the paper qualifications of the job. The interview determines if the personality of the person clicks with the "personality" of the Company. The interviewer evaluates confidence, ability to think on one's feet, hygiene. language skills, attitudes, extrovert/introvert, honesty, humour, social skills, annoying habits.

Interviewee
The interview is a chance to expand on the good points of the resume and negate the poor points. It is the only opportunity to develop a good bond with the Company's hiring staff that may lead to employment. 
For the interviewee the interview is the chance to see what the Company is really like behind the front door. Some firms can seem like very unhappy places that you do not want to work for interaction of Company staff, bulletin boards and the office environment can be observed.
