How to Use a Sausage Stuffer as a Pasta Extruder

    • 1). Unscrew the retaining ring from the end of the sausage maker and remove the sausage stuffing funnel, tube and the metal plate with holes. If present, loosen the wing nut that holds the cutting blade and screw auger assembly in place. Remove the blade, screw auger and handle from the grinder unit.

    • 2). Clean and sanitize the grinder components. Wash the components in hot water and dish soap, then soak for two minutes in a solution of 3 tbsp. of bleach per gallon of cool water. Rinse and dry the components.

    • 3). Reassemble the grinder, but do not replace the rotating blades or the sausage funnel and tube. Choose the metal plate with the smallest holes available, usually labeled "fine," if the unit comes with more than one.

    • 4). Clamp the unit to a sturdy table or other work surface. Fill the hopper with pasta dough, following the manufacturer's instructions as if you were filling it with sausage stuffing.

    • 5). Turn the hand crank to extrude the pasta through the metal plate until the pasta reaches the desired length. Use a knife to cut the pasta cleanly from the end of the grinder and set it aside, then continue cranking the machine until the desired amount of pasta is extruded.
